Spring Soup Broccoli-w850

If like me, you have eaten too much choccy just lately, and want to kick start the healthy eating again for summer. I have found a real health boosting soup that will spring clean you from the inside out! It is very simple to follow and should only cost pennies to make four portions.

What you will need….

  • Spring Soup Spinach-w8502tbsp olive oil
  • 1 red onion, finely chopped
  • 2 medium potatoes, peeled and cut into cubes
  • 1 litre (1¾ pints) of vegetable stock
  • 1 x 200g pack tender stem broccoli
  • 150g (5oz) frozen peas
  • 100g (3½oz) spinach
  • 40g (1½oz) Parmesan cheese, finely grated


Heat the oil in a large saucepan over a medium heat, add the chopped onion and cook gently coating in the oil until soft. Add the potatoes and cook for a further 1min.

Pour in the stock and bring to a simmer, cooking until the potato falls apart.

Meanwhile, trim any tough ends from the broccoli and slice each stem in half lengthways, then add to the pan with the peas and cook for a further 2mins.

Scatter over the Parmesan, and add a sprinkling of freshly ground black pepper. Serve with crusty wholemeal bread.
