Recipe - Chicken BBQ Herbs

At last the weather is beginning to get warmer and we can look forward to inviting friends round to enjoy a BBQ in the garden! We have put together a recipe that you can prepare quite easily for the BBQ– ‘Chicken in a tin’. You may never have tried this type of technique but it is one that we recommend for that ‘little extra something with a difference’. Sitting on top of a beer can the chicken does not come in contact with the griddle and stays extra-moist giving a more succulent taste.

  • Barbecue with lid/cover
  • Herb mixture e.g.
    • Thyme
    • Rosemary
  • Paprika
  • 2 cloves of garlic
  • 1 whole chicken – cleaned inside and out
  • 1 can of beer (of your choice)
  • Poultry seasoning
  • ½ crumbled chicken stock cube
  • Kooki  Chicken Roaster

Preparation Method

Preheat the BBQ – put the herbs into a bowl and make into a paste. Massage the chicken with olive oil then add the paste and rub well in. If you want you can prepare the chicken and leave to marinade prior to cooking.

Pour half the beer from the can (don’t waste it – drink it) then mix the poultry seasoning and stock cube with the remaining beer in the can. Take the chicken and sit upright, firmly onto the can. Place onto the BBQ grill and cook the chicken with the lid closed for at least an hour until tender. Check now and then to make sure that it is not cooking too fast – it can be basted during the cooking time.

Take care when handling as the tin can be very hot, therefore when it is ready it is best to let the chicken rest for about 10 mins before removing the chicken from the tin.

The good thing is that you can easily vary the ingredients for cooking – for instance for an alcohol-free chicken you can try it with wine or fruit juice instead of beer and also vary the blend of herbs!
